The housing is caulked on to the bearing before it is put on the shaft; (New Departure do something similar.)
I like No. 2. as a single bearing can take end play.
You must be able to oil by stauffer or grease gun.
You must be able to obtain oil retaining for one month at least. I say this because rust is a terrible enemy, and ball bearings will not run dry.
I agree with pressing on shaft; you say you can produce to the required tolerance (very fine which I doubt) and you say it suits buyers.
